
The decree of the 18/12/2003 fixes the conditions for the classification of the Houses of Hosts.
All the Houses of Hosts must be subjected to it, except those which:
- have particular conditions of operating, in particular for the seasonal establishments
or located in specific zones;
- meet serious difficulties to conform to the standards of classification, especially when it
acts of establishments put in construction before the date of entry into force of the decree of
18/12/2003;
- have the character of establishments not classified before the date of publication of the decree of
18/12/2003 with the "official Bulletin". This exemption is subordinated to an exemption
exceptional whose tourist establishments can profit if they justify one or several of the cases previously quoted.

In addition to the respect of the standards and conditions envisaged by the decree of the 18/12/2003, the establishments must respect the common right, in particular in regards town planning, of habitat, of hygiene and safety.
In addition, concerning the standards of accessibility to the handicapped people, they are applicable to all the tourist establishments and apply only to the new achievements or with the establishments having been the subject of work subjected to the delivery of one 7 permits building.
STANDARDS COMMON TO The HOUSES Of HOSTS

The buildings of the personnel must in a perfect state of cleanliness be provided with a system of adequate ventilation, equipped well and include a refectory, a room of rest, cloakrooms separated for men and women (at a rate of a shower, of a wash-hand basin and a WC for 20 people), of the individual cupboards and possibly of the dormitories or individual rooms. These buildings must be equipped with toilets provided with basins and small brushes. Wash-hand basins must be located near the toilets and provided with hot water mixer taps and liquid soap disinfectant dispensers always in brush, operating condition with nail cold and towels of single use or dry-hands electric.
Personnel: The house of hosts' 1st category must have (0,9) employees by room and that of 2nd category of 0,7 employees by room. All personnel of the establishment must be resulting from a hotel school or a specialized centre of formation or, justify of one formation or of an adequate training. The unit must be affiliated in the National Centre of Social security in accordance with the regulation in force.
Direction: The director of the establishment must be of good morality, holder of a diploma in tourism or have profited from a training in a hotel trade or justify of an experiment in the domain of management of tourist units.

The personnel of the reception and that of the restaurant must be constantly wearing traditional Moroccan clothes and speak, at least, in addition to the Arab language, two foreign languages includes French.
Stages - Rooms: The maintenance of the rooms must be ensured by one controlling qualified, assisted chambermaids and/or menservants.
Service of night: A permanence of night must be ensured at the level of the services: reception, stages and maintenance.
Safety: The personnel of the establishment must be initiated with the use of the means of fight against the fire and with the operations of first aid. The establishment must be equipped with:
- a direct telephone link with the services of civil protection;
- a lighting safety which must be installed on the level of all the common buildings, corridors and circulations;
- clear and visible plans of evacuation with security instructions sets fire to in Arabic and in foreign languages which must be posted in the rooms, the corridors and the buildings common runs;
- staircases and emergency exits signposted in Arabic and foreign languages;
- sufficient means of fire control which must be signposted and installed in all common buildings, stages and the engineering departments (extinguishing of which those with automatic release on the level of the boiler room, smoke detectors... etc). (For establishments located out of the medina, these means must be reinforced by Taps of Fire Armed and fire hydrants). All the technical equipment of the establishment must be in conformity with the safety requirements in force.
Hygiene and environment : The establishment must respect the standards of hygiene and environment into vigour and must:
- be equipped with a system for the regular treatment on the spot of water of the swimming pool which must be analyzed periodically by an authorized official test establishment;
- proceed regularly to the pest control and the rat extermination of all its buildings by an approved organization, controls must be recorded on a register special and given in case of need to the organizations for control;
- be equipped with a room of conditioning of the refuse (when the infrastructure allows it) duly tiled, cooled with openwork door located near the entry of the service. The room must be permanently managed so as to be clean and to prevent the contamination of foodstuffs, of drinking water, the equipment and the buildings. If not, a space reserved for this purpose.
HOUSES Of HOSTS 1st Category

The house of hosts classified as "1st category" is an establishment with an architecture
traditional Moroccan woman, a decoration and a furnishing of Moroccan style. Services
and comfort must be of quality. The service of the breakfast is obligatory. Rooms-suites
and the common buildings must indicate a luxurious aspect in the field of installation
and of the equipment. The house of hosts "1st category" must have a situation well
selected; have an accessible entry, quite enlightened the night and announced by a sign
carrying the name and the category of the establishment; have a car park kept day and night which
can be substituted by places of stops in the vicinity or around the house of hosts
RECEPTION
The reception must be luxuriously decorated with a Moroccan traditional seal and
include:
- an office or counter of reception;
- a caretaker's lodge having at its disposal a gatekeeper, a hunter;
- sound-proof phone boxes;
- telephone, fax;
- a Moroccan living room equipped with a furnishing of excellent quality;
- a patio or an interior court;
- a Moroccan typical decoration and a typical furnishing a typical Moroccan decoration
and a typical furnishing house of hosts reserved to the customers.
ROOMS AND CONTINUATIONS
Habitability: A minimum of 5 rooms and/or continuations and a maximum of 30 rooms and/or
continuations. The rooms must have a minimal surface of 150,69 ft² and be equipped: of one
daylight and artificial sufficient

of a system of air-conditioning hot and cold

curtains of screening of good quality

of a bed linen of higher quality and comfortable size (Great bed two King people
size, or twin beds of 1,40m X 200m)

of a refined furniture, including at least: a closet or a cupboard, two tables and
two bedside lamps and a switch bed head, carpet or bedside rugs, an inkstand
with the necessary one to write, a hairdresser with a stool, a telephone set, one
armchair by anybody and a coffee table, a luggage stand, a television set connected by satellite, one
mini bar and an individual safe. The Continuations must have a surface of 269, 10 ft² (
bathroom and closet are not included) and being luxuriously arranged and decorated, and include/have, in
in addition the conveniences and furnishing necessary for the rooms: a living room deprived with one
furniture of great quality, an additional telephone set, a television set
additional and a carpet of higher quality.
Hygiene : The bathrooms must be of a surface of at least 86,11 ft² and include

Products of reception of the 1st quality
HYGIENE OF THE COMMON BUILDINGS

Separate common toilets for men and women must be envisaged and equipped with
following necessary equipment: bathrooms with flaps and small brushes on the level
basins, urinals in a sufficient number, wash-hand basins with hot and cold running water (taps
mixers or of the mixing valves), dry-hands electric, reject boxes and liquid soap dispensers
liquid, deodorizers and sufficient ventilation (windows or sheaths equipped with ventilators).

Living room-bar, room service, cafeteria and patio or interior court
Living room - bar : Their surface must be higher or equal to 10% of the total surface of
rooms, and can be limited, in the event of duly justified technical problems, with 40m2. The
room must be luxuriously arranged, particularly comfortable and in perfect state
of maintenance.
Room service: It must be envisaged if the infrastructure allows it to ensure the service in
rooms 24 h/24 (carriages, bells with plates, charts of dishes...).
Cafeteria: duly equipped, it must be arranged in an independent room offering,
exclusively with the chart, the breakfast for the customers. This room must be sufficiently ventilated
and include/have: a stock in a sufficient number (covered, plates in
porcelain, glassmaking of high quality... etc.) and a material of operation (coffee machine,
coffee mill... etc).
Patio or interior court: This space must be shaded and can be decorated of a fountain
or planted trees. It can also be used as living room-court to serve the breakfast.

Kitchen

The establishment must have a service of restoration if the establishment has more than
10 rooms. If the establishment ensures the customers of the complementary services such as
the lunch or the dinner, a kitchen must be envisaged for this purpose. This one must be studied and
equipped in order to ensure a fast service and of quality. Its surface must be
proportional to the number of customers treated by the establishment. The personnel of kitchen must
carry the regulation uniform and comply with the rules of personal hygiene and sartorial.
The kitchen must be arranged and equipped in the following way :
- a hopper of separation enters the kitchen and the room of restoration so that neither the odours nor
the emanating noise of the kitchen can constitute an embarrassment for the customers;
- the ground of the kitchen must be equipped with a tight non-skid tiling;
- the walls of the kitchen must be tiled with a 5.25 ft height, clear colour and
easily washable;
- the buildings, must be aired and ventilated, the filters of the system of ventilation of the hood
of extraction must be regularly cleaned or changed;
- all the windows or openings must be provided with mosquito nets;
- a surface of cooking made up of necessary material of operation which must include/have
at least four sharp fires, of the hotplates and the furnaces, work tables out of stainless,
a master key of service, furnaces, fryers....;
- a surface for the preparation of the cold kitchen;
- a surface for the preparation of fish;
- a surface for the preparation of the meats;
- a room pastry making duly equipped and aired;
- the cold room, the refrigerators and the freezers must be in a sufficient number,
equipped with thermostats and luminous indicators. The cold room must be also equipped
of an alarm bell. The use of racks and crates out of wooden is strictly prohibited.
A waistcoat anti-cold is obligatory;
- a room or an insulated surface reserved for plunge (crockery/vegetables/fruits). It can be
separated from the other schemes of work by a sufficient distance or a physical separation
using a partition out of glass or of a wall tiled with a height of 2m;
- a cellar of the day in a ventilated and accessible place;
- a lawful stewardship composed of two well aired distinct buildings, reserved
respectively to the storage of the foodstuffs and the up keeping products. In any
cases, the up keeping products or disinfection should be stored in the same place
where the foodstuffs are stored (risk of pollution and confusion);
- the refuse vats must be equipped with a control device for easily washable foot,
provide with bags of plastic dustbin tight of use single and placed near the plans
of work;
- wash-stand must be equipped with a control device to foot and be installed in the vicinity
working stations. Those will have to be equipped with hot water mixer taps and
cold, of liquid soap dispensers liquid disinfectant, nailbrushes, dry-hands
electric or of towels of single use.
LINEN ROOM WASH-HOUSE

A service of linen room - wash-house must be ensured for the customers resident (service
optional, if this one under is treated). The linen room must include/have: a washing machine, one
drying machine, calandreuse, a drier. The linen room must be separated from the wash-house and must
have racks of arrangement and a stock of linen at a rate of three plays per room at least
.
ANIMATION - SUNDRIES
Animation :

various activities must be proposed to the customers according to the area of establishment:
- water skiing, canoe, horsemanship, golf, fishing, drive out, pedestrian or different excursions, tennis,
V.T.T, proposal of circuits in 4... etc;
- gaming rooms of company;
- swimming pool (if the infrastructure allows it);
- the establishment must have documentation on Morocco and proceed to the organization
exposures of works of Moroccan art... etc.
Sundries :
the posting of the prices is obligatory on the level of the reception and the rooms.
- A book of complaints must be placed at the disposal of the customers in a place visible at the
level of the reception. - A general-purpose room having complete equipment for
conferences, banquets, seminars.... etc, (if the infrastructure allows it).
- A system of air-conditioning hot and cold installed on the level of all the common buildings
(restaurant, bar, living room, reception, hall...).
- A room for the nursery of children.
- To have a service of medical care directed by an officially agreed doctor of guard. Its
service includes an infirmary directed by a nurse appointed to exempt to the customers
in the event of urgency the care of first need and to ensure the employees a medical assistance
adequate and permanent.
- To lay out booklets in several languages including Arabic containing information about the
establishment, its site and its locality and it must be put at
provision of the customers to the reception.
- A service of maintenance which permanently ensures the correct operation of all those
installations and equipments.
- The use of box springs is strictly prohibited.
Animation: It must be proposed to the customers various activities according to the area of establishment:
- water skiing, canoe, horsemanship, golf, fishing, drive out, pedestrian or different excursions, tennis,

- gaming rooms of company;

The House of Hosts can become House of Charm

The house of hosts is known as in addition "house of charm" when it lays out the characteristics
required for the first category, of the following criteria: to be located in a site with a high
touristic value, distinguished by its exceptional Moroccan traditional architecture and by
the presence of: large patios and flowered and raised gardens, parks, swimming pool, hammam and Jacuzzi;
to have a decoration neat and refined by rare and ancient objects; to present a
gastronomy of Moroccan
and international luxury; to be equipped with a minimum of means
of lodging, in the form of rooms and of continuations, of which the number varies from 20 to 40
rooms (the rooms and the continuations must have a minimal surface respectively
going from 20 to 322,92 ft²); to be equipped with a centre of re-arrangement (sauna, hammam, Jacuzzi,
hydrotherapy, massages, care of the body and the face...).

General presentation of the House of Hosts of second category

The house of hosts classified as "2nd category" is an establishment characterized by sound
structure typically Moroccan, by its decoration and its furnishing of Moroccan style.
The services and comfort must be of quality. The service of the breakfast is obligatory.
The house of hosts "2nd category" must: be easy access; have a well lit entry
harms and announced by an apparent sign carrying the name and the category of the establishment;
have a car park kept day and night (near the establishment or further) (the car park
can be substituted by places of stops in the vicinity or around the house of hosts
reserved for the customers.

Reception

The reception must be decorated and have a Moroccan traditional seal and must include/have:
- an office or counter of reception;
- a general safe;
- a caretaker's lodge;
- telephone and fax,
- sound-proof phone boxes;
- a Moroccan living room;
- a patio or an interior court;
- a Moroccan typical decoration and a typical furnishing.
